The hotel is wrong on multiple levels. First, conversion. It also sounds like Breach of Contract for the valet, as it is implied in the verbal contract that your car keys would only be used by the valet, not turned over to a third party.
I think that if they lawyer up, the hotel is fucked. Especially with a Dallas jury..
