About that pie pan stuff,

I had an idea and asked daughter, who loves to cook: would it help to put parchment paper on the bottom before put the crust in?

She had no idea, but said might be worth trying.  So I tried it.

No, won't be doing that.  I'm going to go back to Sailorcurt's suggestion of greasing the pan.

I've got two pyrex or whatever glass pans, and aside from the sticking with some pies they work well.  

This is also making me wonder about other pies.  Which sound good.

I like the baking sprays with flour. Pillsbury is what I use.

I only use glasspans and no grease, I use prepared pie crust (it easier than scratch). No problem with sticking.

My mother always greased her baking pans with Crisco. She swears by it.

I've had good luck with smearing it with butter and they letting flour stick to the film of butter.

First, you grease the bottom and sides. Then you add a spritz of plain white flour and shake it around for an even, but light, coating. That's it.

I make my crust with flour,salt,butter and a bit of sugar. I only use pyrex pie plates and grease them with butter and dust with flour. Never stick and nice crusts.
