I should note that for turkey and chicken,

all you need for brine is water, kosher salt, rosemary, peppercorns and a small seeded habanero.  And about 6-8 hours is plenty for the whole chicken or turkey breast.

And I didn't screw up the gravy this time.

In the brine you get that bit of extra flavor, no heat at all
