Started out with five pounds of pork belly,

cured it with salt, a little brown sugar and some rosemary, and yesterday I smoked it.  Right now there's three slices popping in the pan.  And after devouring that I'm going to take those loads to the range to try out before the weather turns to crap.

More bloggage later.  Although I will point out one thing: Gov. Walker not playing according to the preferred script of the Evil Party hacks is driving them up the wall.
